If you want the widest window, November to June is a strong choice. If you want migratory species, winter into early spring is better, while resident pilot whales can be seen at other times too.
Morning trips usually feel calmer and give you a better chance of spotting movement on the surface. I wouldn’t obsess over the perfect month, because Tenerife doesn’t really work that neatly.
