The south side is the warmest. Places like Costa Adeje, Los Cristianos, and Playa de las Américas usually get more sun and less rain than the north. The mountains block a lot of cloud, so the difference can be noticeable even on the same day.
If warmth is your main aim, stay lower down and closer to the southern coast. The north has its charm, but it is usually cooler and greener. For winter sun in particular, the south is the safer bet.
