The south coast is the main tourist area, especially Costa Adeje, Los Cristianos, and Playa de las Américas. That is where you find the biggest mix of hotels, beaches, restaurants, bars, and organised excursions.
Most package holiday visitors end up there because the weather is usually better and the setup is easy. The north has tourists too, but it is less resort driven.
