There isn’t one official national dish, but papas arrugadas con mojo comes closest to representing Tenerife. You’ll find them on every menu, from basic guachinches to upscale restaurants.
The potatoes are boiled in heavily salted water until the skins wrinkle and crust over. They’re served with two mojos, red made with paprika and peppers, green with coriander or parsley.
